Miami alumna advances national nutrition policy through consulting career
Emily A. Callahan, a 2006 Miami University graduate in dietetics, has built a career at the intersection of health and nutrition science, communications, and policy as founder and principal of EAC Health and Nutrition, LLC. Through her consulting firm, Callahan helps organizations evaluate and communicate research to promote healthy eating, active living, and population health.
Her path has included unique challenges. In the early years of her business, she worked on U.S. projects from overseas, which made networking more difficult. Callahan relied on maintaining connections through thoughtful communication and leaned on mentors to guide decisions about which projects aligned with her values.
A highlight of her career has been serving as science writer and editor for the Scientific Report of the 2025 Dietary Guidelines Advisory Committee. This two-year project culminated in a document released in December 2024 that informs the federal Dietary Guidelines for Americans, shaping food and nutrition programs and policies nationwide. She also played a key role in supporting the 2022 White House Conference on Hunger, Nutrition, and Health, helping to coordinate a multi-sector task force and its report.
Her consulting career began unexpectedly, but it proved to be a strong fit. While raising four young children, Callahan found the flexibility of consulting allowed her to balance family life with impactful professional work. She continues to encourage aspiring professionals to network, noting that relationships have been pivotal in shaping her career trajectory.
Callahan’s story is featured in EHS Innovates: Founders and Builders, a spotlight series from Miami University’s College of Education, Health, and Society. This new series highlights alumni who are building ventures with a purpose across education, health, sport, and society.
